Ingredients

  • 1 cup frozen mixed berries
  • 1 cup Medjool dates, pits removed
  • 2 cups rolled oats
  • 1 cup almond butter
  • ¼ cup ground flax seeds
  • 5 ml ground cinnamon
  • 1½ cup unsweetened yoghurt
  • 1 sachet PeptoMeal Cinnamon Pancake

Instructions

  • 1. Place the frozen berries in a saucepan over medium heat, stirring occasionally until the fruit begins to thaw and release juices. When heated through, remove from heat.
  • 2. In a food processor, blend the dates until smooth and then the oats, almond butter, ground flaxseeds, and cinnamon. Blend until well combined.
  • 3. Transfer the mixture to a lined 18 x 28 cm baking dish and press firmly into the base. The firmer you press, the better the bars will hold together.
  • 4. Mix the yoghurt and PeptoMeal together.
  • 5. Spread the yoghurt mixture evenly over the pressed base.
  • 6. Dot the yoghurt with the stewed berries.
  • 7. Freeze for 1–2 hours or until firm enough to cut.
  • 8. Remove from the freezer and cut into squares or bars of desired size.
  • 9. Let thaw for 3–5 minutes before serving.
